Sweet N Sour Pot Pie






While I was out of town, Keith took left overs that we had and made this awesome recipe.  Sweet N Sour Pot Pie.  The kids absolutely LOVE it and requested it again for dinner.  So last night we had it and I have to say, I really enjoyed it.  


Ingredients:
2 1/2 cups of mixed veggies (frozen, fresh or canned)
2 1/2 cups of chicken or pork cooked and cubed
2 cups sweet n sour sauce (sauce is in earlier post)
2 cups Bisquick mix
1 cup milk
2 eggs


Directions:
 1. Preheat oven to 425 F'
 2. In 9x13 baking dish, mix vegetables and cubed chicken/pork, add sweet n sour sauce.
 3. In a bowl mix Bisquick/pancake mix, milk & eggs until smooth.  Pour over vegetables and meat.
 4. Bake for 25-30 min or until golden brown.


Servings: 10

White Pizza




So tonight Keith made white pizza.  Now I know what you are thinking, ewe gross, well
actually it is pretty yummy.  The kids really enjoyed it and also had fun helping dad make it.

Ingredients for sauce:
2 cups of heavy whipping cream
1 cup butter
1 1/2 cups of grated Parmesan cheese
garlic to taste

Toppings:  Cheese, italian sausage, ham, mushrooms, olives, onion etc.....

Pizza crust: you can either use refrigerated pizza crust, pre-cooked pizza crust or you can make yours from scratch.

Directions:
  1. Pre heat your oven at 425 F' for refrigerated pizza crust,  pre-cooked crust heat oven at 350 F' and for scratch crust pre heat oven accordingly to the direction for that recipe.  

 2.In a medium sauce pan melt butter, add heavy whipping cream, cheese and garlic.  Heat over medium low stirring occasionally until smooth 
  3. Place your toppings on top of crust, then ladle alfredo sauce over toppings.  Then top with cheese of your choice.  Bake until golden brown or cheese has melted.

Seafood Pasta Salad

So I love seafood and with the spring coming I love cold pasta salads for lunch.  I found this recipe and made it for my lunch this week and I love it.  It turned out better than I thought it would....It goes real well with Keeblers Club crackers.  The buttery taste of the crackers with the salad, all I can say is mmmmmmm Yummy!


Dressing:
2 tbl of lemon juice
1 cup of mayo
1 cup of sour cream
2 tbl of dill


Salad:
1 box of shell pasta
1 cucumber, sliced and diced
1 red bell pepper diced
1/4 cup of green onion top
1 package of crab meat


Directions:
1. In large bowl combine lemon juice, mayo, sour cream and dill.  Set aside
2. Cook pasta according to package directions. Drain and rinse with cold water.
3. In large bowl combine pasta and dressing, toss well.  Refrigerate for at least 30 min or over night.

Cheesy Potato Casserole.

So for our side dish tonight, I made cheesy potato casserole. It turned out really good.  The kids seem to like it.  It went real well with the ham.


Ingredients:
3 cans cream of potato soup
1 cup of sour cream 
1 tbs of all-purpose flour
1 tsp of garlic salt
1 pkg of shredded hash browns
2 cups of shredded cheddar cheese
1 cup of minced onion


Directions:
1. In a large bowl, combine soup, sour cream, flour, onion and garlic salt.  Stir in potatoes and cheddar cheese.
2. Pour into 13x9 baking dish coated with cooking spray.  Sprinkle with Parmesan cheese 
3. Bake, uncovered at 350 for 50-60 min. or until potatoes are tender.

Pot Roast and Rice

Ok so I had some pot roast that needed to be used and I decided to make pot roast and rice.  This recipe turned out better than I thought it would.  Once again, the kids loved it.  I hope you guys enjoy


Ingredients:
3 lbs top road roast cut into pieces
2/3 of chopped onion
2 tsp of canola oil
2 cups of water, divided
2/3 cup of ketchup
2 tbl of brown sugar
2 tbl of worcestershire sauce
1 tsp of paprika
1/2 tsp ground mustard
3 tbl of all-purpose flour
4 cups of rice
minced fresh parsley, optional


Directions:

  1. In a small skillet, brown meat and onion in oil; drain. Transfer to slow cooker.
  2. In a small bowl, combine 1 cup of water, ketchup, brown sugar, worcesterhire sauce, paprika and mustard;  pour over meat.  Cover and cook on low for 5 hours or until meat is tender.
  3. Combine flour and remaining water until smooth; stir into meat mixture.  Cover and cook 30 min. longer or until thickened. 
  4. Meanwhile, cook rice according to package directions.  Stir in parsley if desired.  Serve with meat.

Serving: 8


You can also use noodles instead of rice if you would like.

Pancake & Sasuage Bake

So Keith decided that since it was snowing out, we needed a warm hot breakfast.  So he found this recipe for pancake and sasuage bake.  It turned out really good.  The kids LOVED it.  In fact each of them and a second helping and there was none left in the dish.  It is a really easy recipe to make and doesn't take a hole lot of time.  You can serve hashbrowns or fresh fruit with this.  Let us know what you think.

Indgredients:
2 cups of all purpose flour
1/2 tsp of dried savory
1/4 tsp of salt
2 cups of milk
6 eggs
2 lbs of pork sasuage 

Directions:
Preheat oven to 425 F (220 C)
In a bowl stir flour, savory and salt.  Whish milk with eggs; gradually whisk into fllour mixture until smooth.  Let stand for 30 min.
Meanwhile, cook sasuage in a skillet until golden brown and no longer pink.  Place sausage in 13x9 greased baking dish.  Wisk batter; pour over sausage.  Bake for 20 to 30 min. or until puff and golden.  Serve immediatly
